Make Mint Chocolate Parfaits (a 5 Minute Dessert Idea)!

With my crazy schedule — 4 kids, a husband who is out of town all the time, a blog and a million DIY projects, I don’t have a lot of time to spend cooking. But I LOVE surprising¬† my kids with fun after-school snacks every once in a while.

I had such a great time creating this fun and SIMPLE idea — Mint Chocolate Parfaits with COOL WHIP Whipped Topping. I put them in fancy dishes to make them seem even more special.

This is a 5 minute recipe — just my speed!

Here’s how you make your own:

All you need is three ingredients — COOL WHIP Whipped Topping, Chocolate Pudding and Mint Oreos.

Here’s what you do:

  • Make the pudding according to the instructions.
  • While the pudding is setting up, grind up 10 Mint Oreo Cookies. You can use your food processor or put them in a plastic bag and pound them into crumbs.
  • Then layer the three layers in pretty cups. First the Mint Oreo crumbs, then a layer of COOL WHIP and then the pudding. Make two layers and then end with another layer of COOL WHIP. You can add some mini chocolate chips over the top if you want, or sprinkle a little of the Mint Oreo crumbs on top.

That’s it!! A 5 minute recipe — it makes an amazing after-school snack or a wonderful dessert!!
