Maybe one of your healthy living goals for the New Year is to get your kids to eat more veggies. I have two children who love veggies and are great little eaters — but my oldest daughter not only dislikes most veggies, but it also a super picky eater in general. So I have to find unique ways to get her the recommended three servings of veggies a day!
One of the ways we do that is by adding veggies to our baked goods. We love zucchini muffins and pumpkin muffins. But what if you wanted something that was more of a dessert and less of a breakfast food? Then you’d want to try these delicious carrot cupcakes with cream cheese frosting. Topped with a frosting naturally sweetened by honey, they might actually be healthy enough to eat for breakfast too!
Carrot Cupcakes with Honey-Sweetened Cream Cheese Frosting
- 3 cups white whole wheat flour
- 4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup turbinado sugar, sucanat, or brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup honey
- 1/2 cup butter
- 1 cup milk
- 1/2 cup plain yogurt
- 3 eggs
- 1 tsp vanilla
- 1 cup finely shredded carrots
Preheat oven to 350°. Line muffin tins with liners.
Finely shred carrots with by hand or with a food processor. Set aside.
Melt butter and stir in honey to help dissolve.
Crack eggs into the bowl of a stand mixer and mix while slowly pouring in melted butter and honey. Add milk, yogurt, and vanilla and mix together.
In a separate bowl combine flour, baking powder, baking soda, salt, sugar, cinnamon, and nutmeg. Sift together with a fork.
Slowly add dry ingredients to wet while mixing together until combined. Don’t over mix the batter.
Fold in the carrots until evenly distributed.
Fill muffin cups 3/4 full and bake at 350° for 21-24 minutes. Let cupcakes cool before icing.
Honey Sweetened Cream Cheese Frosting
- 1 – 8 oz package of cream cheese softened
- 1/4 cup honey
- 1/2 tsp vanilla
- 1/2 Tbsp milk
Combine all ingredients in the bowl of stand mixer and mix together until smooth and creamy. Top cupcakes with icing once cooled.
