My Summer Obsession: Fruit and COOL WHIPamberdoty
There. I said it. I know there are those out there who love cold weather, but nothing about it appeals to me. When I think about Winter I think about dealing with children with an unbearable case of cabin fever and noses that just won’t stop running. I spend those months under a blanket and a pile of used tissues with toes that never seem to warm.
Fall and spring are countdowns for me — one to joy and one to doom — and summer? Summer is a three month long celebration for our family. I try to make sure we spend as little time indoors as possible and by the end of August we’re all freckled and sun-kissed and no one owns a pair of pants that doesn’t have a grass stain on the knee.
I could go on and on about why this time of year is my favorite, but topping that list is the fruit. Oh, the fruit.
I think I could subsist entirely off of just berries — strawberries, raspberries, blueberries. Throw in a few peaches, some cherries, and a little watermelon and I am content to leave the other food groups behind for a season.
This summer I am looking forward to introducing Anders and Danica to some fruits they haven’t yet tried. Anders is an apple a day kind of kid and Danica is happy as long as she has a banana, but there is a whole world of flavor out there they have yet to experience. Sometimes they can be reluctant to try new things and for this I have a secret weapon.
Here’s one thing I’ve learned about children in the last five years: they love to dip their food. I can get the pair of them to at least try anything I put in front of them if I give them the means to dip it and to me there is no better dip for fruit than COOL WHIP Whipped Topping.
Fruit by itself can be a hit or miss snack offering, but fruit with COOL WHIP? Now that is a dessert.
I like to cut up a big bowl of fruit in the morning, let it chill all day, and then bring it outside to the deck in the afternoon with a little bowl of COOL WHIP for everyone. We all eat until we pop and then wash our sticky faces and hands off with a run through the sprinklers. I’m telling y’all. It’s a regular all-American, summer montage around here in June, July, and August.
