Chili Con Carne

  • 2 tablespoons oil
  • 1 onion, chopped
  • 1 pound ground beef
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 16 oz can diced tomatoes
  • 1 cup tomato puree
  • 1 teaspoon paprika
  • 1 teaspoon chili powder (optional)
  • 1 teaspoon salt
  • 16 oz can red kidney beans


Heat oil in a large frying pan over high heat and cook onion until soft and golden. Add ground beef and cook until brown, then add peppers, diced tomatoes, tomato puree and spices.

Cover, reduce heat to low and simmer for 30 minutes. Add beans and simmer until heated through. Add a little water if the chili is too thick.

Serve with rice or spaghetti.


  • For the kids, puree the peppers and beans so they are not visible. The chili doesn’t make this dish hot, but add it after you have served the little ones if you prefer.
  • This recipe does need some salt, but adjust the amount to suit your taste.
  • Leftovers great on toast!
