Pork Cutlets with Fresh Apple Sauce

Ingredients:

  • 3 apples, peeled, cored and sliced
  • 1/2 cup water
  • 2 tablespoons honey
  • 4 x 8 oz trimmed pork cutlets
  • 2 tablespoons wholegrain mustard
  • 3 tablespoons soy sauce

Method:

For the fresh apple sauce, place apples and water in a small saucepan, bring to a boil, then reduce heat to low. Simmer for 12-15 minutes, stirring occasionally. Remove from heat, stir in honey, cover and keep warm.

Combine mustard and soy sauce in a flat dish; coat both sides of the pork cutlets with marinade. Heat a non-stick pan to high heat, cook cutlets for 5 minutes each side for slightly pink in the middle, or until cooked to your liking. Transfer cutlets to a plate and cover with foil to keep warm. Add remaining marinade to pan and cook for 2 minutes. Add some water to extend the sauce and heat through.

Serve pork cutlets, drizzled with pan juices and a pile of fresh apple sauce.
