Pulled Chicken Sandwich
- 3 cups shredded cooked chicken
(from a precooked deli-roasted chicken)
- 1/4 cup BBQ sauce
- 2 tablespoons white vinegar
- 6 good crusty rolls
- 2 cups “ready-to-go” coleslaw mix with dressing, prepared according to the package directions
- 18 frozen onion rings, cooked according to the package directions
In a small bowl, mix the chicken, BBQ sauce, and vinegar together and set aside. Cut open the rolls, add some of the chicken mixture and coleslaw, then top each with a few of the warm onion rings – it’s messy, but you’re gonna love it.
Onion Ring Shortcut: Rather than cooking the frozen onion rings according to the package directions (slowly on bake), speed up the whole process by giving them a quick zap in the microwave and then cooking them under the broiler. Turn the rings over when one side is browned and cook the second side. They cook quickly – but that’s what you want, right?
