The Good Eggwich
Getting your kids outta bed can be a Herculean task some mornings, right? Just think how fast the kids will spring out from under the covers when they know The Good Eggwich
is waiting at the table with a big sunny-side up smile. That’s right; now you have the perfect before-school bargaining chip for those challenging days.
- 1 slice whole wheat or white bread
- 1 teaspoon olive oil
- 1 egg
- 1 slice processed cheese
- 1/4 inch-thick slice of salami
- 2 squirts of ketchup
- Nonstick pan
- chopping board
- 1 round cookie cutter (4 inches in diameter)
- steak knife
Lightly toast bread.
Add olive oil to nonstick pan over medium heat and fry egg sunny side. up. Spread the whites of the egg by tipping the pan from side to side and front and back. It will take about 4-5 minutes for the whites to set.
Remove egg from pan and place on the chopping board.
With round cookie cutter, stamp out a circle from the egg whites, keeping the yolk centered within the cutter.
Place the slice of cheese on the toast and place the egg on the cheese.
Cut the salami slice in half. It will resemble a half moon. Then using a steak knife, carve the center out from one of these halves to form a smiley mouth.
Place the salami smile below the yolk, and squirt two dabs of ketchup above the yolk as eyes.
