Roasted Parsnips and Carrots
- 1 pound of carrots, peeled and sliced in half
- 1 pound of parsnips, peeled and sliced in half
- 2 tablespoons olive oil
- salt and pepper
Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Toss carrots and parsnips with olive oil and season with salt and pepper. Bake for 30 minutes, or until starting to turn golden brown.
