Orzo Tomato Stew With Spicy Sausage and Fennel

I had dinner at my mother in law’s, neighbor’s, friend’s house a few weeks back and was treated to this amazing stew. The fennel and spicy sausage flavors will have your guests thinking it took days to prepare, when in fact it’s quite a snap. And if you make the base ahead of time tis even easier. The perfect dinner party dish.


  • Olive oil
  • 6 large fennel bulbs diced
  • 2 onions fine diced
  • 2 garlic cloves minced
  • 2 T Tomato paste
  • 8-9c chicken broth
  • 2, 14oz cans diced tomatoes
  • Salt & pepper to taste
  • 8 sweet and 2 hot Italian sausage links, removed from casings
  • 1 1/2 cups orzo pasta
  • 4 cups baby spinach
  • Fresh grated Parmesan cheese


In a massive pot, fry fennel and onion with a good gulping of olive oil until just turning brown. Add garlic and stir for another minute. Add the tomato paste, chicken stock, tomatoes, salt and pepper. Bring almost to a boil and turn down heat. Cover and simmer gently for 20 minutes.

Squeeze meat out of the sausage and fry in a skillet until brown.

Now bring the base to a boil and add the orzo. When the orzo is al dente, in about 10 minutes, add the sausage and spinach. Its ready when the spinach is wilted. Serve with grated parmesan cheese and a good bottle of red.
