Mashed Potato Tacos
- 1 1/2 cups leftover
- 4 corn tortillas
- 2 tablespoons sour cream
- 4 teaspoons hot sauce
- 1/2 cup finely chopped green onions (scallions)
- 4 handfuls of potato chips – preferably the extra-crispy
Warm the potatoes in a small pot or in the microwave until they are heated through. Heat the tortillas in a nonstick skillet until they begin to get a little color in spots and a little crispy.
Spread some sour cream onto each tortilla. Add about 1/4 of the mashed potato to each tortilla. Drizzle with the hot sauce and then sprinkle with the green onions. Take a handful of potato chips and crush them on top of each taco.
Fold in half and serve.
